I got back in the kitchen this past week and it felt so good. Now, if you know me you might have just laughed out loud. I am by no way shape or form a cook but I have gotten this itch to cook more lately, so I have decided to try and start scratching it, at least once a week anyway.
We try to cook low-carb meals, which I am all about. Last week, I ordered two new keto-friendly cookbooks and got busy picking out recipes when they came in. My mom and I decided to make it even more interesting, we were going to cook together, along with some quality bonding time!
Our first recipe was from – “The Easy 5-Ingredient Ketogenic Diet Cookbook” page 107. “Cheesy Bacon & Broccoli Chicken.”
Ingredients include:
- 2 tablespoons ghee
- 2 boneless chicken breasts
- Pink Himalayan salt
- Freshly ground black pepper
- 4 bacon slices
- 6 ounces cream cheese – room temperature
- 2 cups frozen broccoli florets, thawed
- ½ cup shredded cheddar cheese
Directions:
- Preheat the oven to 375 degrees.
- Coat your baking dish with ghee.
- Season your chicken breasts with pink Himalayan salt and pepper.
- Place the chicken breasts and the bacon slices in the baking dish and cook for 25 minutes.
- Once complete, take the chicken breasts to a cutting board and use two forks to shred them. Be sure to season it some more with Himalayan salt and pepper.
- Place the bacon on a paper towel-lined plate so that it will crisp up.
- In a medium bowl, combine the cream cheese, shredded chicken, broccoli, and half of the bacon (be sure to crumble it up). (Instead of frozen broccoli, we chopped the florets off raw broccoli and cooked it while the chicken was cooking.)
- Transfer the chicken mixture into the baking dish and top with Cheddar and the remaining bacon. (I did not measure out our cheese, just covered the top layer.
- Bake until the cheese is bubbling and browned for roughly 35 minutes.

This dish was so good and was super easy to make! I felt almost like a chef! It reminded me a lot of Broccoli Rice Casserole. If you aren’t a broccoli fan you could always swap it out with cauliflower. What are some of your great low-carb recipes I can try?
